I do this recipe occasionally when I want a dish that combines with fries, ahah. The potatoes were finely chopped, dried in absorbent paper, fried until golden and dried again in absorbent paper to eliminate the oil in excess. Then, I just add a little of black pepper freshly grounded. You can change the potatoes by white rice and black beans. A good salad is always a good idea too.
INGREDIENTS:
- 1 rack of pork ribs with approximately 740 g
- 3 large garlic cloves
- 1 large bay leaf or 2 small ones
- 1 shallow dessert spoon of salt
- 2 small dry chillies
- 1 lemon (juice)
- ½ glass of white wine
- 3 coffee spoons of paprika
- 1 coffee spoon of thyme (I used fresh, but you can also use dry)
- 1 coffee spoon of rosemary
METHOD:
- In a mortar, add all the ingredients and smash them. If you don’t have a mortar, just put the ingredients on a small bowl and smash them with the bottom of a tablespoon, for example. Taste the sauce and adjust it if necessary.
- Do cuts on the meat side of the ribs, put it in a glass drying kind of tray and pour over the sauce. Leave the meat side of the ribs down. Cover it with foil and take it to the refrigerator overnight or at least for 4 hours to marinate.
- Cut the ribs and put them in a hot grill. Let it cook for 30-45 minutes or until the ribs are well cooked.
- In a small pan, heat the sauce and let it boil for 2 minutes. In the middle of the cooking time and with the help of a pastry brush, add the sauce to the ribs.
Serve with lemon slices.
